Green is the new red
Our very own pasta sauce recipe !
Ingredients
(MAKES 5\6 family meal portions)
5 tins of organic chopped tomato
2 leeks
2 courgettes
2 carrots
3 sticks of celery
1 sweet red pepper
100 grams of curly kale
50 grams of spinach
50 grams of green beans
50 grams of sugar snaps
2 cloves of garlic
a generous pinch of dried oregano
500 ml water
Method
leave tinned tomato aside and wash and roughly chop all veg. put a large pot on a medium heat pour in a good gulp of rapeseed oil or olive oil add dried oregano & garlic. keep moving the garlic around the pot. add carrots, leeks, pepper, green beans, sugar snaps, courgettes, kale & spinach give a good mix lower the temperature to low-medium, pour in water and cover. allow veg to sweat for 30 minutes stirring every now and again. add in all the tinned tomato and bring the heat back to medium while giving it all a good mix. leave the lid off and stir for another 10 minutes. turn off hob and allow to rest. next blitz all veg until there is no lumps season with salt and pepper.
Portion out in to zip lock bags depending on size of family. our family of 5 gets about 6 dinners. Freeze. when ready to use simply place in saucepan on a low - medium heat and warm back up.
this sauce goes perfect on all kinds of pasta's including family favourites like bolognese, Lasagne and even pizza. (add cream to make a yummy soup)
