driving me caprese

ingredients 
1 ball of fresh buffalo mozzarella 
handful of your favourite tomatoes. (we use plum & roma) 
fresh basil leaves 
1/4 cup of fresh blueberries 
1 tbspn of pine nuts
rapeseed oil to drizzle 
balsamic vinegar to drizzle  
method 
place pine nuts in a pan on a med heat & toast until a little gold. tear mozzarella in to rough chunks & place on a serving plate or bowl. roughly chop tomatoes & pick basil leaves off stalks add tomatoes & leaves to mozzarella. chop a few blueberries keeping some whole also & scatter around dish sprinkle over pine nuts & drizzle with rapeseed oil then balsamic vinegar.
